Pecan Butter Balls (Mexican Wedding Cookies)

Yield: 50 cookies

Ingredients:

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 1/2 cups finely chopped pecans
  • 2 cups powdered sugar

Directions:

  1. Preheat oven to 350° F.
  2. Cream butter, add sugar.
  3. Add salt and vanilla.
  4. Slowly add the flour to the mixture
  5. Add the chopped nuts and mix until just combined.
  6. Roll dough into one inch balls and place 1" apart on cookie sheets.
  7. Bake 15 minutes or until starting to brown.
  8. Remove cookies from the oven and roll them in powdered sugar.
  9. Place cookies on a cooling rack.
  10. Once cookies have cooled completely, roll them in powdered sugar again.
